Quite frankly, the whole 'stealing the Death Star plans' wasn't really a major part of Kyle Katarn's backstory imo.
It wouldn't be terribly difficult to emulate Star Wars: Dark Forces II storyline at least. Well, the new Canon DOES have Sith/Dark Jedi Inquisitors, as per Rebels.
